IIRC we're only covering "print", "screen" and "all" at the moment.
However, the new CSS dispatcher allows you to specify a template (css.php?t=templatename). You could create your template + an action plugin that, based on some client detection, modifies the meta headers and uses your template.
I think the biggest problem with developing templates for handhelds is that most of them contain full fledged browsers nowadays which don't care about the "handheld" media type anyway (I am maybe wrong however 
).
