One very frequent use case for me is when I want to type, "10 m" and don't want the abbreviation for metres to get wrapped on to the next line, or when I want "1 1/2" to stay together without getting broken by a line break.
You could always define an entity for that.

It's not entirely clear to me whether you are suggesting I define an entity for non-breaking spaces (which I did a while ago), or define entities for every unit abbreviation and fraction. Given that so far, you've been resisting proposals to define an entity for non-breaking spaces, I can only assume the latter.
Defining entities might work for unit abbreviations, although there are probably a couple of dozen such entries that might be needed, so while possible it's not really an elegant solution. But for fractional numbers, the permutations are so vast that it's simply impractical to define entities for them all.
Given the choice between defining a single entity for a non-breaking space, or defining numerous entities to cover every fraction and unit abbreviation, it simply makes more sense to define a single one for non-breaking spaces.
Even wikipedia uses non-breaking spaces for this purpose.
