I want to change the baseurl to be something along the lines of "wiki.mydomain.com", where "mydomain.com" is a domain name I own. Is this possible, and if so, how do I implement it?

There seems to be a fundamental misunderstanding here. Your domain must point to your DokuWiki instance and not vice versa. This is done via DNS. You should familiarise yourself a little with the technical basics of the internet and contact your provider.
