For what you're asking for, there is a so-called customkey attribute
pre-implemented in the sortablejs plugin, see here:

To write the image titles into the customkey attributes
of your table cells, all you have to do, is to copy and paste the following code to your /dokuwiki/conf/userscript.js
:
(Create this file, if it does not exist yet, on your system.)
jQuery("div.sortable table td").each(function(){
if ( jQuery(this).find("img").length > 0 ) {
$img_title = jQuery(this).find("img").attr('title');
jQuery(this).attr('sorttable_customkey', $img_title);
}
});
Save your userscript.js
, close and restart your browser to see the effect. Now, sortablejs can sort your images by title.
(I tested this, it works and it's update-safe.)
