Well, when a variable is used somewhere, it is common sense not to remove that variable but to rather change it's value. But, yes, it would be helpful if the available style.ini placeholders were mentioned on the template page.

Yes, unfortunately, you are right. We wanted to change that behaviour (and much more about how style.ini works) for a long time as that is the only thing which will get overwritten by an update.
Thinking about it now, it should be really easy to introduce "style.local.ini"... I'll add something like that, but I'm not sure if it will get included in Adora Belle or the release after that.
Another vital thing which is missing there is a possibility to change the style.ini values through the admin interface...
