I know a boring employee manual isn't the most exciting thing in the world to do, but right now we have our manual in about 50 separate Word documents and it's just a mess. (putting them all in one document would be a mess too...)
We are a pediatric therapy clinic with about 45 employees and 3 locations, so wanted to make something user friendly and easy to access via the web.
I gave it a shot with MediaWiki first, because I guess that is the most popular (it's what Wikipedia is created with if you didn't know), and it wasn't that bad, but the main thing it lacked was ACL (access control lists). So basically it would be difficult to protect certain pages and such.
So then foswiki and TWiki (they're both similar to each other), they look pretty nice but honestly I couldn't get them working, so then kept looking for other wiki solutions and tried out DokuWiki. So sorry I tried you guys last but guess it should be a compliment that I tried a lot of others and have selected to use this now! :)
I'm still learning it, just started using it a few days ago and trying to get my employee manual with nice sections and pages and such, so will be searching here for more information.
