In the "style.css" file (lib/style folder), the "div.no" section is responsible for most of the attributes of these quotes.
That is definitely not true!

It is possible to define things like margin, font-size, line-height etc.
You should not style
div.no[/m] but [m]blockquote[/m] instead! (Because [m]div.no is used in other places as well.)
And you should not change
lib/styles/style.css as well. Maybe I misunderstood you there!?
If you are making your own template, change those styles instead. If you are just making adjustments to an existing template, better edit
conf/userstyle.css. (Create it if it is not there.)

I cannot, however, remove the gray line displayed in those blockquotes using those attributes. Where is this line defined and how can I disable it?
Best way to help yourself is installing the Firefox extension "Firebug". With Firebug you can tell very easily what styles comes from which style declaration.
If you are using the default template, the culprit is
div.dokuwiki blockquote[/m] in the template's [m]design.css.
