Are you using the redirect (or virtual host) method for some special reason? A symlink setup is simpler if all you want to do is create a single Dokuwiki engine for all of your wikis.
If you are using a linux system, and are unfamiliar with midnight commander, I would suggest installing it. It's a text-based file browser that you use in the terminal and does all kinds of things, like creating symlnks, changing permissions, creating directories, traversing the directory structure of a tarball or zip file, etc. . . . It will make organizing your farm visually accessible.
On a debian/ubuntu system, you invoke it as
sudo mc
This will give you permission to act as root for all of the mc commands.
